Not much

Hey there, I am so sorry that I haven't postet that much in the last days. I have soo much to do at work that I just don't have the time so make nice food-photos. And most of the time my food wasn't even that special.
For example, I took one picture of my usual fruit-salad for dinner:

Pumpkin-bread

I told you that I bought Pumpkins in the last post. To be more explizit: I bought two. One I used for the soup, and the other one to make my sooo loved Pumpkin-bread.
This is a recepie my mother-in-law told me.

Pumpkin-Bread
Ingredients:
- one pumpkin
- pumpkin-seeds
- spelt flour (wholemeal)
- salt
- sugar
- (coconut) oil
- water
- yeast

Heat the Oil in a pot, put the pumpkin (peeled and sliced)and some sugar if you like in it and some water. Cook it till smooth and then blend it up.
It actually tastes so good, that I almost forgot to take a picture, the one you see is of the very last slice! :-)
Now you can just take every bread-recipe or even a bread-mix and put the pumpkin-mouse in it instead of the water. I just used my usual bread-recipe.
From the pumpkin the bread gets a nice sweet taste, I thing it is almost like Cake and I love to eat it just with margarine

Pumpkin-Soup

Today I had some Pumpkin-Soup for Lunch. I saw some nice Pumpkins when I went to the supermarket and just had to buy them.
The pumpkins I bought are middle sized I think, they are not theís really small ones (for decoration) and not the bis ones you use for Halloween.
I took a picture of the pumpkin with a pencil beside it, so you can guess the size.

Pumpkin-Soup



Ingredients:
- one middle sized Pumpkin
- 2 Potatoes
- 1/2 L vegetable Stock
- 4 Tablespoons Pumpkin-Seeds
- 2 Tablespoons Coconut-Oil
- Pepper, Paprika

First peel and chop up pumpkin and potatoes. Put the coconut Oil (of coure you could use any other oil, butthis one gives a very light coconut flavor to it- delicious!) in a pot and heat it up. Then sear the potatoes and pumpkin peaces in it for some minutes. Fill everything up with about 1/2 L of vegetable Stock (maybee a bit less). Now let it simmer for a while. When everything is cooked put it in a Blender, or use a stik-blender, blend until smooth. Fill in a soup-bowl and decorate with some Pumpkin-seeds (or soy-cream if you like).
This amount is for two servings as a main dish or four as a starter.

Maybee you are on a weight watchers diet (like I am right now), then you might be interested in the fact that the whole soup has only 5 Points without the Pumpkin-Seeds!

Long time no see

My husband and I had a really nice weekend at his parents house. I want to show you some pictures I took of the family dogs. The first two I call "thinking dogs" ;-)

Ingredients:
- white baguette
- mixed lettuce
- tomatoes
- cucumber
- smoked tofu slices
- ketchup and mustard

puff pastry

Yesterday I had some fruits for second breakfast (no I'm not a Hobbit). So easy can veganism be!


And later I made spinach-puff pastry from the Attila Hildmann cookbook. I just pimped the recipe with some dried tomatoes

Ingredients:
- puff pastry (I choose spelt)
- Spinach
- cashew-nuts
- sundried tomatoes
- salt, pepper, nutmeg
